  • Remove all visible fat and skin from meat and choose leaner cuts of meat.
  • Skim fat off the top of casseroles and stews.
  • Try not to fry food. Bake, steam, boil, grill or roast on a drip tray instead.

One of the healthy and delicious dishes to try, including all the recommended foods, is this recipe from BBC Good Food. It is inspired by the Mediterranean diet and is as follows :

  • 400 g chicken mini filets
  • 300 g vine tomato, roughly chopped
  • 1 red chili, deseeded and finely chopped
  • 1 garlic clove, crushed
  • Handful pitted black Kalamata olive
  • 1½ tbsp. extra-virgin olive oil
  • 100 g feta cheese, crumbled
  • 1 red onion, finely sliced
  • Small bunch of mint leaves, chopped
  • Juice and zest ½ lemon

Preparation :

  • Cook the quinoa as per the pack instructions, rinse in cold water and drain thoroughly.
  • Meanwhile, mix the butter, chili and garlic into a paste. Toss the chicken filets in 2 teaspoons of olive oil with some seasoning. Lay in a hot griddle pan and cook for 3 to 4 minutes on each side or until cooked through. Transfer to a plate, dot with the spicy butter and set aside to melt.
  • Tip the onion, tomatoes, olives, feta and mint into a bowl and add the cooked quinoa. Stir through the remaining olive oil, lemon juice and zest, and season well. Serve with the chicken filets on top, drizzled with any buttery chicken juices.
